5 Minute Salad of Goat Cheese, Herbs and White Beans

Ingredients
12 oz. mixed salad greeens
3 tablespoons EVOO
2 tabelspoons balsamic vinegar
1/2 teaspoon Dijon mustard
salt and freshly ground black pepper
1-1/2 cups cherry tomatoes
1 cup canned cannellini beans, drained and rinsed
4 oz. fresh goat cheese, crumbled (preferably reduced fat)
2 tablespoons fresh basil leaves, torn, or 1 teaspoon dried basil

Directions
Place the greens in a large bowl. Whisk together the oil, vinegar and mustard, then season with salt and pepper. Drizzle the dressing over the greens and toss. Divide the greens between 4 plates, top each with about 7 tomatoes, 1/4 cup of beans and 2 tablespoons of goat cheese. Sprinkle with the basil and serve.

Ooo... this does sound fantastic. And easy, as you mentioned in your other post about it.

I have yet to browse through too many of your posts but, do you use sheep feta cheese ever?
